African Delicacies and their Issues

As Africans, Most especially Nigerians, especially people who grew up in the western part of the country. Meat is some thing we cannot do without. We enjoy different varieties of meat prepared in different ways. while this might be acceptable for some ( watch out for my article on " eating according to your blood group " ), it is very detrimental to some and might cause very terminal illness.


red meat, as we all know is not as good as it tastes to the body. it increases the risk of several terminal diseases like high blood pressure and obesity. we need to watch the intake of such food by cutting them down and replacing them with healthier foods. You must not eat meat as your main source of protein, legumes and other plant proteins can replace it.

Fukun, liver and kidney are very important in animals as it aids transportation of foods in the digestive process. since fukun acts as the lungs and therefore filters anything safe for air to the body of the animal, anything not wanted is stored in it. same as the liver that acts as a filter and removes infectious substances from food to animals, it also collects any disease causing infection in the animal and stores them before it is being transported out through the kidney. at any point where the animal is killed, as far as the kidney and liver are functional, all the disease causing organisms and infections would be contained in both the liver and kidney. this could be transfered to any human or animal that eats the kidney even if the parts are boiled.

So what do we say, do we want to take out time to clean and prepare these internal parts of the animals we eat or do we want to reduce the intake or get rid of them totally.

Some parts are actually safe like the pomo which is the exterior but remember we do not know about the hygienic conditions of where the animals where kept prior to their slaughter. This part only contains hardened skin and fiber but might also contain infections which could be rid of by thorough cleaning and cooking same goes to the shaki or towel part. other lower risk parts are muscle or ishan.

A good replacement for beef and other high risk parts are fish especially dried fish like okporoko or panla ( I know some people are hungry at this point or Fresh or dried prawns, well cleaned snails (as seen in the pics).
